Rice Shochu (Kome)
The very first shochu was a distilled sake, i.e. a shochu made from rice (Kome Shochu). Traditionally, rice shochu is made in Kumamoto, but there are other regions where it is produced. Rice shochu is often very mild and excellent as an accompaniment to food. Sake kasu shochu is great for cocktails. Sake fans are usually enthusiastic about rice shochu.
