Shochu is the most widely consumed spirit in Japan—a true national drink. It can be made from over 53 different raw materials. Honkaku (authentic) shochu is distilled only once and is always fermented with koji. Shochu therefore offers unique flavors. Awamori may only be produced in Okinawa and is considered a close relative of shochu, but it is always made with (Thai) rice and black koji.
