New products in our store: Sake, Shochu and Mirin

To sweeten your summer, we have added some new products to our range. We have increased our sake range a little and now offer you 3 more premium sakes with a fantastic price-performance ratio.

Two hon mirin have also been added. Mirin may be familiar to some of you as a condiment. Only a few and exclusively high-quality mirin are produced in Japan in drinking quality. You should definitely try our two Hon Mirin straight. A pleasure that is second to none.

We are also delighted to welcome a new producer from Oita. Bungo Meijyo produces the finest mugi shochus there. Two fantastic candidates from this renowned company are now available from us.

20 Years aged Black Mirin (Kuro 20 Hon Mirin)

An absolute rarity and delicacy is this 20-year aged Hon Mirin - a real mirin - from Aichi Prefecture, the home of mirin production. This Mririn is made according to traditional craftsmanship, using only glutinous rice, koji and rice shochu as ingredients. The 20 years of storage in steel tanks give this mirin a particularly deep dark color and its intense and extremely delicious taste. The sweetness is very elegant, the aroma extremely smooth and it also has an intense umami note. The texture is slightly creamy and rich. It has a full body with an exciting complexity. The producer is Kankyo Shuzo, based in the city of Kanie.

Hon Mirin is a high-quality Japanese sweet liqueur and one of the most important condiments in Japanese cuisine, in which it is used in many ways. The most famous example is probably teriyaki sauce. This Hon Mirn can be drunk wonderfully as a liqueur or like a sweet wine. It is just as enriching as an ingredient in cocktails as it is as a condiment or as an exciting component for exciting culinary experiences. 19,99€.

Hon Mirin Mukashi Ikomi

Hon Mirin Mukashi Ikomi is a Hon Mirin from Aichi Prefecture that has been matured for two years. The producer is also Kankyo Shuzo.

Mukashi Mirin has a very smooth and elegant taste. It has an elegant natural sweetness, little acidity and a good portion of umami, and is very suitable for drinking. Caramel notes can be tasted as well as light chocolate aromas. The texture is creamy and the body is full of interesting complexity. Price: 19,99€.

Ubugoe Shochu

Ubugoe Shochu is a barley shochu (mugi) made with white koji and flower yeast from cloves. The result is a particularly floral, fresh and fruity shochu with a taste that is second to none. It is also a Genshu Shochu, which is bottled undiluted at 41% vol.

The Ubogoe Shochu is unique in many respects. The use of two different types of koji, white koji and flower koji, in one shochu is extremely rare. In addition, the use of blossom yeast is actually only known from sake production. And here, too, it is extremely rare. Only 29 of the more than 1,700 sake breweries in Japan use this method. And only two other shochu distilleries besides Bungo Meijyo use blossom yeast for shochu production. This is because blossom yeast is susceptible to the acidity produced by white koji. Each step requires a lot of time and effort, and compared to normal shochu, it must be fermented at a very low temperature so that the aroma is not lost and the low-acid yeast can fully develop the properties of the blossom yeast. But the effort is worth it: blossom yeast has an excellent fermentation capacity and produces a very special taste that is both beautiful and spicy in aroma. This gives Ubugoe Shochu its unique character and exciting, floral complexity. The high alcohol content makes it a very special digestif.

Organic Kariu Shochu

The second shochu from Bungo Meijyo: Organic Kariu is a shochu made from barley (mugi) that comes entirely from organic farming. This organic barley is certified by QAI Japan, the official certification body for organic cereals in Japan.

Kariu Shochu initially has a slight sweetness before an elegant barley note is combined with a beautiful fruitiness. A very special shochu for many situations, which is also extremely refreshing. It can be enjoyed straight or on the rocks, as well as in light cocktails.
