The Nayuta No Toki Shochu from Unkai Shuzo is a barrel-matured soba shochu (buckwheat) with a particularly mild and gentle taste. It is aged for over three years in oak barrels in a disused Kyushu Railways tunnel in the small town of Gokase. The conditions for maturing shochu in Miyazaki Prefecture are ideal. Summers of up to 35°C and winters of around 4°C ensure large temperature differences all year round. In addition, the air is particularly clear and the taste of shochu is strongly influenced by nature. Very fine vanilla notes emanate from the barrel and a wonderful soba aroma spreads when the bottle is opened.

The Nayuta No Toki Shochu tastes refreshing and mineral with slightly sweet notes of buckwheat and barrel. Selected buckwheat is used, as is the particularly soft and clean water that surrounds the town of Gokase, which has a population of just under 4,000, from the river of the same name. This soba shochu is made with white koji and rice koji after the buckwheat is heated and ground to gently remove the husk. The storage in oak barrels in the old Japan Railways (JR) railroad tunnel, which acts as a natural warehouse, gives Nayuta No Toki its special aroma and golden color. Incidentally, Unkai Shuzo is the inventor of soba shochu, where buckwheat was processed for shochu production for the very first time in 1974. The Nayuta No Toki has already impressed in various competitions, including the Monde Selection Gold Award.

Nayuta No Toki is traditionally bottled at 25% vol. It can be enjoyed straight, with ice cubes or as a highball with soda. When paired with food, it goes particularly well with pasta, soba noodles, okonomiyaki, cheese and tempura as well as sweet desserts.

About the manufacturer

Unkai Shuzo Co. was founded in 1942 as Gokase Shuzo Ltd. and changed its name to Unkai Shuzo in 1975. Initially the company produced wine, but gradually Unkai expanded its range to include beer and shochu. The manufacturer is known for its environmentally friendly production processes. Recycling centers were set up at the production sites and research was carried out into the recycling of waste materials from shochu production. In 1999, the company succeeded in producing recycled animal feed for the first time with its patented technology. Today, Unkai sells its feed to cattle farms throughout the country.

Unkai Shuzo is also known for its exquisite skill in the production of alcoholic beverages and its flair for trends. This is where the country's very first soba shochu was produced. Interestingly, the company also produces "German Kölsch" and "German Alt" and successfully launched them on the Japanese market. The company is headquartered in Miyazaki on Japan's third largest island, Kyūshū, which is known as the birthplace and home of shochu.
