Umeshu is probably the most traditional liqueur in Japan. Every family has its own secret recipe for it. The ume is often called a plum, but botanically it is an apricot. Only the Benisashi Ume is used for the Kaga Umeshu 5 Years. This special variety only grows in Kanazawa City (Ishikawa Prefecture) as well as in the neighbouring Fukui Prefecture. "Beni" means "red" and "sashi" means "glow". The name thus stands for the deep red and radiant colouring of the ripe ume. The ripe fruits of the benisashi ume have more amino acids than other ume varieties of high quality (nankounai ume). Due to the higher proportion of amino acids, the Benisashi Ume has a milder aroma and an intense umami flavour. The Kaga Umeshu 5 Years is produced according to a traditional technique. It is matured in steel tanks for over five years and has a clear and rich flavour of ume. The balance between sweetness and acidity is perfectly balanced. Due to the long ageing, this Umeshu has a complex, intense and at the same time mild taste.
The Manzairaku Kaga Umeshu has already won several awards and is served on all first class flights of the airline ANA (All Nippon Airways), among others. It has also been served as a digestif at the Nobel Prize reception.
This liqueur is an ideal aperitif and digestif, and can be enjoyed straight, on ice or with soda. Kaga Umeshu is also very good in cocktails.
