For the production of Kaga Sparkling Umeshu, the well-known Kaga Umeshu, made by Manzairaku Sake Kura in Ishikawa Prefecture, was lightly carbonated. The result is a soft, sparkling and delicious drink with 7% alcohol, ideal as an aperitif or during a meal.
Description
Umeshu is a Japanese apricot liqueur and the most traditional liqueur in the country. Only Benisashi Ume is used for Kaga Umeshu. This special type of apricot grows only in Kanazawa City (Ishikawa Prefecture) and in the neighbouring Fukui Prefecture. "Beni" means "red" and "sashi" means "shine". So the name stands for the deep red and bright colour of the ripe Ume. The ripe fruits of Benisashi Ume have more amino acids than other high quality Ume species (Nankounai Ume). Due to the higher proportion of amino acids, Benisashi Ume has a milder aroma and an intense umami taste.
The Manzairaku Kaga Sparkling Umeshu has already won several awards and is served on all first class flights of the airline ANA (All Nippon Airways), among others.
The Sparkling Umeshu should be enjoyed chilled.
