Citrus meets spiciness: Chill Green is a botanical shochu that is characterized by its citrus aroma and spicy taste. Maqaw, also known as mountain pepper or lemon pepper, is used as a botanical. The properties of maqaw are extremely diverse - it has a lemony scent and is reminiscent of a mixture of pepper, lemongrass, thyme, ginger and citrus fruits. The small, pepper-like fruits are rich in essential oils, grow on evergreen trees and are native to Taiwan and Southeast Asia. The taste of maqaw is less intense and pungent than that of chili and normal pepper. It is often used as a seasoning in Michelin-starred restaurants. Incidentally, the chill green is produced by Daiyame producer Hamada Shuzo, who is known for his intense and unusual flavors.

Chill Green is designed to provide relaxation. The name is made up of the combination of "Chill Out" and "Green", which refers to the natural, "green" ingredients of the product. As with Shochu, no sugar or other additives are used. During production, maqaw is added as a botanical to the first mash (moromi) of the product and fermented. This allows the aroma to develop particularly well. The alcoholic base of Chill Green is a Honkaku barley shochu (mugi), made with barley koji and white koji. The combination of the citrus flavors, the beautiful spiciness and pungency as well as the grain and umami notes of the shochu make for an absolutely new taste experience!

Chill Green tastes fantastic with tonic or soda - also great in the Izakaya classic "Lemon Sour" - and is also an exciting base for unusual cocktails.

About the manufacturer

Hamada Syuzou was founded in 1868 and is based in Ichikikushikino in Kagoshima Prefecture. The company has three distilleries: Denbeegura, Denzoingura and Kinzangura. These embody the core ideas of the company's vision in the production of shochu, namely tradition, innovation and heritage or succession.
Since its inception over 150 years ago, the company has strived to produce premium honkaku shochus (genuine shochus) and has earned a reputation for producing some of the finest shochus in the world. The company is also innovative and focused on environmental protection. In Denzoin, for example, biogas produced during fermentation is collected to be used as fuel for the distillation kettles. Other residues from shochu production are used as animal feed and as a raw material for compost. In addition, an energy-saving steam system is used to steam the raw materials, which works with a low steam content and therefore achieves energy savings of over 40%.
