The Jin Junmai from is a Junmai sake with a rice polish of 68%. It has a full body, an intense rice flavor and a mild acidity. This Junmai is made with the extremely rare Hokuriku 12 rice variety, which only two breweries in the whole of Japan use. This sake comes from Ishikawa Prefecture, which is known for its high-quality sake. It impresses with great rice aromas and mineral, almost slightly tart nuances. A light and fresh companion that can also be enjoyed warm.

Jin Junmai is produced by Manzairaku Sake Kura in Hakusan, at the foot of the mountain of the same name. The area is famous for its clear and medium-hard water, which is particularly suitable for sake brewing. The brewery has existed since the Edo period and was founded in 1716. There are around 35 sake breweries in Ishikawa Prefecture, which have a special craftsmanship and produce fine and complex sake. The traditional art of brewing is preserved here. At the same time, they are also facing up to the challenges of modernity. Most breweries are small and can only produce small quantities. Jin Junmai sake is made from the extremely rare Hokuriku 12 rice variety. This was created in 1926 by crossing the two rice varieties Ou 2 and Mangoku. Hokuriku 12 is very difficult to grow due to its weakness against diseases, insects and gusts of wind, which is why many companies have given up growing it. But not Manzairaku: after a few years, the sake brewery started to cultivate Hokuriku12 again in Torigoe near the brewery with local rice farmers. Today, including Manzairaku, only two breweries in the whole of Japan use this special type of rice. The result is a sake with a pure and intense rice flavor. It tastes slightly bitter with a lovely mildness and fine acidity. The mineral notes make this sake a light and fresh companion. The finish is long with an intense umami aroma.

About the manufacturer

Manzairaku Sake Kura is one of the most renowned and oldest sake breweries in Ishikawa Prefecture on the island of Honshū. The company, which has been in existence since 1716, is not only known for great sake, but also for fantastic umeshu. The prefecture has clear water of outstanding quality, which gives the spirits produced there an intense and incomparable taste. Manzairaku means "always be happy". The brewery is located at the foot of Mount Hakusan in the town of the same name. Since 1990, the company has been producing sake as well as Kaga Umeshu, which has already won several awards.
