This sake will soon reach the recommended aging limit of 2 years from the bottling date (bottled 06/2024), but it is still in excellent condition. It can be enjoyed without any loss of quality until the end of June 2026, though it will likely remain at its best for another 3–4 months. Please note: For the best enjoyment, it is recommended to consume the bottles promptly, as any potential loss of quality will then be barely noticeable or not at all!
The Mizutoriki Superdry is an extremely exceptional Tokubetsu Junmai sake. As the name suggests, this sake is very dry (Sake Meter Value: +10) with a pleasant acidity and astringency. The gently smoky notes—"Smoky Style"—paired with light roasted aromas are particularly compelling.

Mizutoriki Superdry is produced by Kakuboshi in the city of Kesennuma, Miyagi Prefecture. The brewery is famous throughout the country for its sake and has won many awards. Slightly smoky on the nose with roasted notes of rice pudding, the finish is dry and long, yet with a very fine sweetness and beautiful acidity. This sake goes well with salty dishes such as fish in a salt coating, butter chicken or caviar, as well as with fatty dishes such as pork belly or roast goose.

About the manufacturer

Kakuboshi was founded in 1908 in Kesennuma, Miyagi Prefecture. The brewery was hit extremely hard by several strokes of fate: after a major fire in 1929, the buildings were completely destroyed. The following year, the family rebuilt the company headquarters on the same site. Sake Kura has been a registered tangible cultural asset of Japan since 2003. During the devastating earthquake in 2011, the first floor of the building was washed away and the second floor was severely damaged. The brewery was completely rebuilt in a former school in May 2016 and uses state-of-the-art technology. The brewery's sake has won many awards and is considered to be particularly light and fresh. Its aroma is not too strong and goes particularly well with seafood, the culinary flagship of Miyagi Prefecture. Kakuboshi is a small company with 30 employees, half of whom work in production.
