Yomo-Gin: A fresh, herbal drink with yomogi and gin

Yomogi is an extremely important herb for Japanese cuisine. It is best known here as a spice for daifuki mochi, and it also colors these mochi beautifully green. Yomogi is closely related to wormwood, but less bitter and much milder in taste. As a liqueur, it is extremely fresh and complex and combines with Kabosu liqueur, gin and Angostura to create a herbal, fresh drink with depth.
You will need:
- 4cl Wa Bi Gin
- 1.5cl Dover Yomogi liqueur
- 1.5cl Kabosu liqueur
- 3 dashes Angostura
Stir all the ingredients over ice, strain into a cocktail glass and enjoy.
