The Togouchi Ayumi Sake Cask Finish combines two significant aspects of Japanese culinary culture: the art of whiskey production and the time-honored art of sake brewing. Thanks to its unique aging process in sake casks, this Japanese blended whiskey develops a distinctive character that captivates with floral aromas, a pleasant sweetness, and a harmonious taste experience.

At the Sakurao Distillery, Togouchi Ayumi is crafted from a carefully balanced blend of malt whiskey made from malted barley and select grain whiskeys. The blend is first aged in ex-bourbon barrels, which impart its characteristic vanilla notes.
The whiskey is then given an additional finish in barrels that were previously used to age sake. This special maturation step enriches its aroma profile with delicate, sake-inspired floral and fruity nuances, giving it exceptional depth of flavor.

On the palate, the soft vanilla notes from the bourbon cask maturation blend with a subtle, creamy sweetness, complemented by the subsequent sake cask finish. The result is a well-balanced whiskey with a smooth texture and an elegant flavor profile. No colorants are added. Togouchi Ayumi derives its natural golden color exclusively from aging in wooden casks.
Aroma: Floral and fruity with hints of honey and vanilla.
Taste: Mild with nuances of ripe fruit and a subtle sake influence.
Finish: Smooth with delicate oak notes.

About the manufacturer

The SAKURAO Brewery and Distillery was founded under the name Chugoku Jozo in 1918 in the Sakurao district of Hatsukaichi City, Hiroshima Prefecture. Initially a producer of shochu and sake, the company has been producing the famous Togouchi whisky since 1990, for which the distillates are imported from Scotland and Canada. Only the storage and blending are carried out by the SAKURAO Brewery. However, storage takes place in a very special place: the city's 361-metre-long railroad tunnel, which has never been completed, is used to store the fine spirits. The temperature here is 14 degrees Celsius all year round and the humidity is 80%, ideal conditions for maturing shochu and whisky.

Since December 2017, the company has been involved in the production of western craft spirits following the establishment of another production facility, the Sakurao Distillery. The first spirit was the Sakurao Gin Original, followed shortly afterwards by special editions of this gin series, the Sakurao Gin Limited and the Sakurao Gin Hamagou, both in small quantities. The hundred years of experience in the production of spirits is certainly one reason why Sakurao Gin tastes so fantastic. In 2018, the company then released its natural liqueur series with "Hassaku Rocks", "Yuzu Rocks" and "Lemon Rocks". The company's first single malt whisky has been available since 2021. In March 2021, the company changed its name to SAKURAO Brewery and Distillery Co. Ltd.
