The Hokkaido Kiyosato Cask is a shochu made from potatoes. The nose is almost floral, the finish is long and aromatic with a light vanilla note and a beautiful fruitiness. After distillation, this shochu matures for six months in untreated American oak barrels and is nice and light at 25% vol.

The Hokkaido Kiyosato Cask Shochu has been produced by the Kiyosato Shochu Brewery since 1975 and is the first potato shochu ever produced in Japan. It is in fact a potato shochu, not to be confused with sweet potato shochu, which has a much longer tradition in Japan. The Kiyosato Cask Shochu is characterized by its very smooth taste, paired with a pleasant fruitiness that comes from the white koji. The Kiyosato Cask matures in wooden barrels, which gives it its amber color as well as wood and light vanilla notes.

The region around Kiyosato, located east of Hokkaido at the foot of the Shiretoko peninsula, is known throughout Japan for the cultivation of its high-quality potatoes. The winters are not too harsh, which has a positive effect on the potato harvest. Kiyosato is a small town with a population of around 4,000 and is located in a rural area at the foot of Mount Shari. The town is blessed with particularly clear water from the Shari River, which is considered one of the purest rivers in Japan. The potato shochu is distilled using the lower waters of Mount Shari. In addition to the great taste of this shochu, the elegant bottle design immediately catches the eye. This has been regularly honored with the Good Design Award since 2015.

The Kiyosato Cask Shochu tastes great straight and on the rocks, but can also be extended very well with soda.
