The Yamanoka Shiso Shochu is produced by the Hananotsuyu Distillery in Kurume, Fukuoka Prefecture, at Kyūshū. Produced with red shiso, this shochu is extremely refreshing and goes especially well with food. Shiso (perilla) is a spice and medicinal plant and it is hard to imagine Japanese cuisine without it. It is particularly aromatic, has an antibacterial effect, strengthens the immune system and is absolutely delicious.

Description

The manufacturer of the Yamanoka Shiso Shochu is the Hananotsuyu Distillery, which has been in existence since 1745. Since then, very high quality sake and shochu has been produced here. In the production of Yamanoka Shochu, the Hananotsuyu Distillery combines its two competences by producing this shochu not only from red shiso but also from sake rice, which provides a light sweetness. Yellow koji is used, which produces great fruit notes. At 20% vol. this is a particularly mild shochu, but its aroma is extremely long and intense. Shiso is said to have its origin in the Himalayas, but has been used in Japan since ancient times in the Jomon period (300 BC). It has a unique scent, a healing and also antibacterial effect and strengthens the immune system.

The Yamanoka Shiso Shochu is an ideal accompaniment to food and goes perfectly with fried chicken, yakitori, white fish such as dorade, or even cheese. It can be enjoyed especially well on the rocks and changes its taste elementarily. It is also delicious with soda and lots of ice or extended with cold water (Mizuwari), but should be mixed in a ratio of 1:1.

About the Hananotsuyu Distillery

Hananotsuyu Distillery is located in Kurume in Fukuoka Prefecture on Japan's southernmost main island Kyūshū, in Jojima, the famous sake district. Actually little sake is produced on Kyūshū, as the island is an absolute Shochu stronghold. However, here in Jojima, on the lower reaches of the Chikugo River, the area is blessed with high quality water. Sake brewing has been very popular here since ancient times. Hananotsuyu Distillery is very innovative and focuses on producing both high quality sake and shochu, using different production methods. In the production of its shiso shochu, Hananotsuyu Distillery combines its expertise by making this shochu using sake rice.
