For many sake lovers, the name "Dassai" is synonymous with Japanese premium sake, but very few people know that there is also a shochu in the Dassai range. This is a sake kasu shochu (or kasutori shochu), i.e. a shochu produced from the finest sake pomace. In the case of Dassai Shochu, this is the finest Daiginjo pomace. Dassai shochu is extremely rare and a true rarity on the shochu market, as the raw material for this fine spirit is only available in small quantities. This shochu impresses with its wonderfully fruity and clear Daiginjo aroma and is sure to delight any sake lover.

Dassai Shochu is produced by Asahi Shuzo in Yamaguchi Prefecture. Its fragrance is particularly fruity and naturally strongly reminiscent of sake. A slight sweetness is just as noticeable as the clear aroma. At 39% vol., this shochu is a genshu shochu, i.e. it is not diluted with water after distillation. The Dassai Shochu is refreshing, with a full body and an interesting complexity. As it is very difficult to obtain, it is also known in Japan as "Phantom Shochu".

Dassai Shochu 39° pairs very well with seafood, lean meat, vegetables and sweet desserts. It can be enjoyed neat, on the rocks or extended with cold water.

About the manufacturer

Dassai is probably familiar to every sake connoisseur, as for many this name is synonymous with premium sake. In Yamaguchi Prefecture, manufacturer Asahi Shuzo has been producing premium sake exclusively since 1948. "Dassai" literally means "otter festival" and was used a long time ago in Yamaguchi Prefecture because so many otters lived in the surrounding rivers.
