This 18-year-aged Hon Mirin, a true mirin, is an absolute rarity and delicacy from Aichi Prefecture, the home of mirin production. This mirin is produced using traditional craftsmanship, with only glutinous rice, koji, and rice shochu. The 18-year aging in steel tanks gives Kuro Mirin a particularly deep, dark color and an intense, delicious flavor. Its sweetness is very elegant, its aroma extremely smooth, and it also possesses intense umami notes. Hon Mirin is a high-quality Japanese sweet sake and one of the most important seasonings in Japanese cuisine, where it is widely used. The most famous example is probably teriyaki sauce. Only the highest-quality mirin—like this one—is used as a beverage in Japan.
