The Japanese single malt Saburomaru V The Hierophant combines intense peat smoke with ale yeast. The multifaceted interplay of smoke and chestnut demonstrates just how exciting Japanese whiskey can be. The historic Saburomaru Distillery in Toyama Prefecture is one of the few distilleries in Japan that has consistently specialized in heavily peated single malts. The result is a whiskey that combines classic smokiness with innovative production methods, developing a style all its own. This bottling uses heavily peated malt from Islay. However, special attention is paid to the fermentation process: in addition to traditional whiskey yeast, a specially aged ale yeast was also used. This unusual combination provides additional aromatic depth and lends the distillate an exciting complexity. The whiskey was distilled in 2021, before being allowed to mature carefully until its bottling in 2024.

The nose already reveals a successful balance of fruitiness and smokiness. Juicy apples and pears blend with delicate notes of honey and a subtle spiciness. On the palate, the robust peat smoke initially takes center stage, but is harmoniously complemented by the warm aromas of roasted chestnuts, a hint of maple syrup, and a slightly salty minerality. This combination creates a complex yet balanced flavor profile that unfolds layer by layer.

The long finish is characterized by dry ash notes, lingering smoke, and a subtle spiciness. Despite its intense aromatics, the whiskey remains elegant and superbly balanced.

The bottling also stands out visually. It is part of the Saburomaru Distillery’s Tarot series and bears the name The Hierophant. The elaborately crafted design underscores the special collector’s appeal of this edition.

Bottled at 48% ABV without chill filtration, this single malt is best enjoyed neat at room temperature or with a few drops of water. This allows the complex smoky aromas, the creamy texture, and the extraordinary combination of peat and ale yeast to shine through beautifully. A fascinating whisky for lovers of intense, characterful Japanese single malts.

About the manufacturer

The Saburomaru Distillery was founded in 1952 in Toyama Prefecture and is part of the long-established Wakatsuru Shuzo, whose history dates back to 1862. While the company was originally known primarily for sake, Saburomaru has evolved over the decades into one of Japan’s leading whiskey distilleries. Today, it is considered a pioneer in intensely peated Japanese whiskies and enjoys an excellent reputation, particularly among connoisseurs of smoky expressions.
The distillery combines traditional craftsmanship with innovative ideas. For example, it was the first distillery in the world to develop a cast-bronze still, which plays a decisive role in shaping the character of its whiskies. At the same time, Saburomaru regularly experiments with different yeast strains, cask types, and production methods, all while maintaining its distinctive signature.
The distillery produces relatively small quantities and places great emphasis on quality. The cool climate of Toyama Prefecture, along with the exceptionally soft spring water from the surrounding mountains, creates ideal conditions for whisky production. Today, Saburomaru stands out among Japanese distilleries for its characterful blends and single malts, which feature pronounced smokiness and exceptional aromatic depth.
