Shochu is a spirit obtained by distillation, which usually has an average alcohol content of around 25 to 30 percent, sometimes up to 45 percent, and has been produced in Japan for 500 years. Shochus have very different flavors, ranging from mild to fruity or even spicy. Some are matured in barrels and thus take on woody notes.

There are 5,000 different types of shochu in the Gen bar in Tokyo. This illustrates just how diverse this spirit is. Bar Gen is located at 2-9-10 Shibuya, Shibuya-ku (Shibuya subway station), but unfortunately does not have a website.
