The Jozen Mizuno Sparkling Sake, produced by the Shirataki Sake Brewery, impresses with its fruity, but at the same time not too sweet taste. Notes of lychee and guava can be tasted as well as those of green apple. At 13% vol, this Sparkling Sake is higher in alcohol content than others available in our store. The rice polish level is 60%.

Description

Jozen Mizuno Sparkling Sake is produced by the Shirataki Sake Brewery in Echigo Yuzawa in Niigata Prefecture. The region is especially famous for its soft water, which is enriched with many minerals. This is certainly one reason why Jozen Mizuno tastes so balanced. Creamy on the nose and tasting of green apple, on the palate tasting of lychee and guava, this sparkling sake has a surprisingly dry finish. It is characterised by a successful balance between sweetness and acidity. Sparkling Sake is produced according to the traditional brewing method from water, rice and koj. The taste is very refreshing and light.

Mizuno Sparkling Sake is an ideal aperitif, but also goes well with lighter dishes or as an accompaniment to desserts.

About the Shirataki Sake Brewery

The Shirataki Sake Brewery was founded in 1855 and is located in Echigo Yuzawa in Niigata Prefecture, also known as "Snowland". It takes 40 to 50 years for the melt water of the snow to be absorbed by the ground water. On this long journey, the water is cleaned of impurities and enriched with many valuable minerals. The soft water that flows back to the surface is absolutely pure and fantastic. It tastes subtly sweet and is a blessing for sake and shochu production. The Shirataki Brewery is certain: quality sake is born from quality water. A total of 10% of the almost 1,000 sake breweries in Japan are located in Niigata Prefecture. The prefecture is the largest sake producer in the country and is celebrated worldwide for the quality of its products. The cool climate additionally favours sake production by ensuring slow fermentation.
